葡萄人工挑選採收後,腳踩壓榨再糖分發酵7天,每天壓帽。約3周後,陳年期間選用500L與600L的橡木桶(20%的為全新)中陳釀17個月,未經過濾以保護那進一步發展、軟化後演變成美味與複雜的風格。
由複雜的工法所釀製而成,酒體散發新鮮玫瑰花香,覆盆子多汁且迷人附著草本香料刺激著味蕾。酸度活潑與單寧細膩,令人印象深刻!進一步陳年之後帶出飽滿酒體中的精緻結構,尾韻悠長。

Fermentation: Foot stomped and seven-day cold soak then feral fermented with daily delestages in the
beginning, followed by punch downs later on. Two to three-week total maceration.
Fermented with 50% whole clusters.
Cooperage & Elevage: Aged for 17 months in 500L and 600L puncheons, 20% new. Bottled unfiltered.

Tasting Notes
A bouquet of rose petals, raspberries, clove and Fourth of July sparklers explodes from the glass. Flavors of grilled fruits, anise, and five-spice evolve into a seamlessly smooth mid-palate. These flavors are carried into an impressive finish with juicy acidity and fine tannins. This wine will reward those willing to wait a few years, but it’s hard to resist right now.
