Germany white wine 2016 PROBSTEY Riesling dry
Country: Germany Appelation: The name Probstey was first mentioned in the 13 th century, when the famous Rheingau abbey Kloster “Eberbach” and Kloster “Sankt Maria zu Mainz” owned some of the best parcels of this vineyard. The Probstey is a wind-open, south-facing slope with up 35% in steepness and a very warm microclimate. The yellow sand and limestone soils result in rich, full-bodied wines, balanced with precise acidity.
Nature of soil: The soil is mixture of clay, loam and limestone.
Vinification: In late October, the grapes picked exclusively by hand at the ideal moment of their ripeness. The pressing, the vinification and the wine-maturing takes place in our winery in Saulheim. Prior to pressing, we leave the crushed grapes 36 hours on their skins to extract a maximum of flavour compounds. The musts are fermented spontaneously with natural yeast in small French oak barrels from the Vosges with a capacity of 500 litres (”Tonneau” from Tonnellerie Damy, Meursault). After a maturation of 7-8 months on the fine lees, the wines are bottled in the summer following the harvest.
Wine characteristics: Often herbal and a bit green in nature, Silvaner is a much maligned grape. Yet when planted at the best vineyard sites on limestone and chalk, it seems to blossom into something perfumed and quite fruity, redolent of peaches and fresh pears. Characteristic herb notes are fresh and nuanced, highlighted against brisk citrus and apple flavors and a silken supple mouthfrrl. Mineral, perhaps even crystalline, in style this elegant bottling showcases also pristine grapefruit and tangerine flavos. It’s full bodied yet silkey, uplifted by a swathe of freshly cut grass and mint that lingers long on the finish.
